Thursday's Eats ~ Texican Chili

Since snow decided to grace us with her presence again, I assumed a yummy soup recipe was in order.  We all know that when it snows, all one should have to do is curl up on the couch with a good book.  So, I chose a crock pot recipe.  You can thank me later. :)


Texican Chili

 8 bacon strips, diced
2 ½ lbs beef stew meat, cut into ½ inch cubes
42 ½ oz stewed tomatoes
16 oz tomato sauce
16 oz kidney beans, rinsed and drained
2 c sliced carrots
1 medium onion, chopped
1 c chopped celery
½ c chopped green pepper
¼ c minced fresh parsley
1 TBSP chili powder
1 tsp salt, optional
½ tsp ground cumin
½ tsp pepper

In a skillet, cook bacon until crisp. Remove to paper towel to drain. Brown beef in the drippings over medium heat; drain. Transfer to a 5 qt slow cooker; add bacon and remaining ingredients. Cover and cook on low for 9-10 hours or until the meat is tender stirring occasionally.  When I make this, there are never ANY leftovers!  I'd estimate it serves 8-10 people. So easy and sooo good.

I just LOVE vintage ads!  They are such a window into what our culture was just a few decades ago.  Who knows, if you make this chili your husband might just say...
"Gosh, darling, this is really swell!"

    I love Campbell's soup. I made Tim make home-made veggie soup for the last several weeks in a row. . .but now he's burned out on it because we'd eat it every day for lunch. Oh well.
