Thursday's Eats ~ Texican Chili

Since snow decided to grace us with her presence again, I assumed a yummy soup recipe was in order.  We all know that when it snows, all one should have to do is curl up on the couch with a good book.  So, I chose a crock pot recipe.  You can thank me later. :)

Texican Chili

 8 bacon strips, diced
2 ½ lbs beef stew meat, cut into ½ inch cubes
42 ½ oz stewed tomatoes
16 oz tomato sauce
16 oz kidney beans, rinsed and drained
2 c sliced carrots
1 medium onion, chopped
1 c chopped celery
½ c chopped green pepper
¼ c minced fresh parsley
1 TBSP chili powder
1 tsp salt, optional
½ tsp ground cumin
½ tsp pepper

In a skillet, cook bacon until crisp. Remove to paper towel to drain. Brown beef in the drippings over medium heat; drain. Transfer to a 5 qt slow cooker; add bacon and remaining ingredients. Cover and cook on low for 9-10 hours or until the meat is tender stirring occasionally.  When I make this, there are never ANY leftovers!  I'd estimate it serves 8-10 people. So easy and sooo good.

And now, a glimpse into the past...

The ad says,
"Wouldn't I be silly to make it myself? Go to all that bother.. when Campbell’s is so homey and nourishing?  Not me!
When I was a little girl, I remember we always made our own vegetable soup.  Mother used to devote just hours to to it. But one day when she was rushed, she tried Campbell’s Vegetable Soup.  My dad’s not so easy to please, but he ate a bowlful, and then another.  Since then, Mother has served Campbell’s… and Dad’s been as pleased as a kid!
I’m married now myself and — well, we young-marrieds all feel that same way.  I mean why bother to make vegetable soup when Campbell’s Vegetable Soup is so wonderful — a grand-tasting beef stock and all those 15 garden vegetables.  Why, every time I serve it, my husband says: ‘Gosh, darling, this is really swell!’  And what better music can a wife hear than that?  Now I ask you!”
I just LOVE vintage ads!  They are such a window into what our culture was just a few decades ago.  Who knows, if you make this chili your husband might just say...
"Gosh, darling, this is really swell!"

  1. Hahaha! This post made me laugh.

I love Campbell's soup. I made Tim make home-made veggie soup for the last several weeks in a row. . .but now he's burned out on it because we'd eat it every day for lunch. Oh well.

  2. too funny:) "why go to all the bother.." lol Maybe it was a bit more wholesome back then;)

  3. I adore vintage ads!!! But your Chili sounds delicious!!! :)
