A Different Kind of Saturday

Today I woke up and I wasn't thinking about an assignment I needed to finish or a project I needed to start.


Today I woke up and I realized there were no more assignments and there were no more projects.


Finally, I have my Bachelors degree in Finance!  


It has been a very long road and a whole heck of a lot of work, but I'm done!  I'm writing this because I still don't believe it and it still hasn't sunk in, but writing about it isn't making it feel more real either. It feels completely surreal!


I spent the morning working on work projects and church projects and then I spent the afternoon at the pool. It was glorious.


My grandmother came into town on Thursday, so we'll be spending Memorial Day with my family.  My younger brother graduates from high school on Tuesday night and we'll be spending Tuesday afternoon with my family that day too.  Full and fun weekend!

A Makeover

I wish this was a Courtney makeover, but its just a simple blog makeover.  I on the other hand bit my lip twice in the same place and now I look like I have one Angelina Jolie lip.  Doesn't look quite as good if you only have one.


Regardless, the look of my blog has needed some love for over a year now, so I finally sat down last night and touched it up.  Instead of working on my final project. My priorities are not in line this week.






If you look at the top, you'll notice I know have an "About Me" section, which has no words yet.  I want you to imagine.  I also have a "Recipes Index" which I am super excited about because it allows you to sort the recipes I've put up on my blog and you can even search!  Last but not least, I moved all of my "Archives" to another page. 


2 days and 1,000 more words and I am DONE with my undergrad! Pretty soon this might turn into an hourly countdown. It doesn't feel real at all, but the possibility of graduation sounds fantastic.


My grandmother is flying in today for my brother's high school graduation so I get to go to the Atlanta airport again, yay!  Excited to be seeing her though, it has been almost 2 years.


Alright, I'm prioritizing now.  Must go clean bathrooms, take a shower, have conference calls, finish paper and drive to the airport.  Have a fun Thursday!

Tid Bits of Life

Caleb and I are planning a trip to Europe in August, so we've started putting together our list of must see places which has been fun!  We've also been talking for several months about upgrading our camera so that we can document our trip with something a bit better than a point and shoot.  So we bit the bullet on Saturday night.  We bought a Nikon D5100 at Best Buy.  It was on sale and if we bought it that day we would get triple Reward Zone points.  We're planning to use the points we receive from the purchase of the camera to purchase an additional lens before our trip.  Now we get to learn how to use it!



I have several good friends that are photographers, so it is a bit intimidating.  Luckily I'm not aiming to be a photographer, just hoping to take some pretty pictures to remember special times in our life!

On Saturday during my errand running, I went to Ann Taylor Loft to browse their sale.  I signed up to win a $50 gift card and guess what?  I did!

Full versus Busy

Sometimes Mondays feel like a break after our jam packed weekends.  I think our next free weekend is almost a month away.  We have a full life and I'm grateful for it!


Thursday night I picked up my friend Lauren from the airport.

We spent most of Friday together running some errands so that she could get some items she can't buy in Denmark. Aside from when I dropped an entire cup of coffee on my kitchen floor, our time together was fun!



Saturday I spent half of the day running errands while Caleb did some studying.  Then I spent the second half of the day doing some cleaning and catching up on work.


Sunday was a full morning at church, one of my favorite types of gatherings - baptisms!  I love hearing people's stories and watching them make a proclamation of God's faithfulness in their lives.


Several weeks ago, I read a friends blog about viewing life as full versus busy.  It really resonated with me because many of my days appear to be very busy to outsiders, but to me they are full - full of things I have chosen to be a participant in because I want to, not because life is controlling me.   Sometimes I have to choose to view my life as full instead of busy, on days where I cannot begin to accomplish everything I wrote down on my atrocious to-do list.  Maybe one day I'll learn to write a realistic list.  Until then, full instead of busy. 



Speaking of full, this is my last week as a undergrad college student. What?! Yes, I am so excited but it doesn't even feel real. At all. Cannot wait to turn in my last assignment!

His Spirit

Love the truth in this – because our relationship with Jesus is not about following a list of rules and checking a bunch of boxes, it’s about His Spirit dwelling in our hearts to the point that we are overflowing with His goodness and cannot help but respond.

Rules, guidelines, lists, and requirements – they put knots in my stomach and put an ache in my soul, because I know the damage they can cause.  I know the heartache and turmoil that ensues from an intuition portraying God as a task master instead of a loving Father.

I am overwhelmed at the freedom God has given me, to live through Him and because of Him.  His Spirit has also brought a perception that can sometimes be a weight, because at times I feel the oppression that cannot be seen with the eyes. Thankful that God intercedes for us when we cannot find the words.

Mexican Stuffed Shells


Mexican Stuffed Shells
1/2 of meat/bean mixture (see  below)
20ish jumbo shells cooked al dente
1 cup salsa
4 oz cream cheese
1/2 cup taco sauce
1 cup cheddar cheese
green onions
sour cream

Put 1/2 of the meat/bean mixture in a skillet and add cream cheese.  Heat until cheese is melted.  Remove from heat.

Pour salsa on bottom of 9×13 baking dish.  Stuff each shell with the meat mixture (about 2-3 TBSP per shell). Place shells in 9×13 pan open side up. Cover shells with taco sauce.  Cover with foil and bake for 30 minutes.
After 30 minutes, add shredded cheese and bake for 10-15 more minutes, with the foil removed.  Top with any condiments you’d like (green onions, black olives, etc.) Serve with sour cream and/or more salsa.


Meat/Bean Mixture
(I use 1/2 of this for the above recipe and the other 1/2 for serving on top of rice for lunches)

1 lb ground beef
1 15 oz can black beans
1 tsp chili powder
1 tsp cumin
1/2 tsp salt
1/2 tsp garlic
1/2 tsp onion powder

Cook ground beef until done.  Drain any grease.  
Return ground beef to pan and add the beans and spices.  Mix well.
