Thursday's Eats ~ Pumpkin Muffins

A few weeks ago I found this recipe from This Chick Cooks and wanted to try it. I love cooking with whole wheat flour and limited sugar, so this recipe just called my name. I excluded some things, like the nuts and raisins because Caleb isn't a fan, but if you like that, then add them right back!


You literally take the first 5 ingredients and mix them together in one bowl.  Then in a second bowl, mix the rest of the ingredients. Then mix it all together in one bowl and it's ready for the muffin tins!  I made one batch as muffins, then I ended up making another batch for mini loaves. Just reduce the heat to 375* and increase the cooking time a tad. 







Whole Wheat Pumpkin Applesauce Muffins
makes 12 muffins or 4 mini loaves


2 cups whole wheat flower
1 teaspoon baking powder
¼ teaspoon baking soda
1 teaspoon salt
2 teaspoons pumpkin spice
2/3 cup brown sugar
¾ cup applesauce
½ cup pumpkin
1/3 cup buttermilk (you can take regular milk and add a little lemon juice as a substitute)
2 eggs


Preheat the oven to 400. Blend whole wheat flour and dry ingredients through pumpkin spice.  In a separate bowl, mix all the other ingredients together. Then, add the flour mixture to the wet mixture and stir until combined.


Divide batter among 12 lined or greased muffin tins. Bake 15-20 minutes until a toothpick inserted in the center comes out clean.  


Very easy and a good dose of fiber!
