Thursday's Eats ~ Baked Spinach Artichoke Dip

Well, all we've been eating for a week is turkey this, turkey that, and turkey the other thing.  Not much creativity going on over here. :)  

This is a great recipe for an easy appetizer. I've made it several times for different parties and the dish is always empty when I leave.

Baked Spinach Artichoke Dip

1 c sour cream
1 c freshly grated parmesan cheese
14 oz artichoke hearts, finely chopped
9 oz frozen spinach, thawed and squeezed to drain
½ c chopped red bell pepper
¼ c shredded Monterey Jack or mozzarella cheese

Heat oven to 350*. Mix sour cream and parmesan cheese. Stir in artichokes, spinach and bell pepper. Spoon mixture into 1 quart casserole dish. Sprinkle with cheese. Cover and bake about 20 minutes or until cheese is melted. Serve warm with crackers.
