Here’s an easy way to jazz up a typical tuna fish sandwich
and add some veggies!

1 can light tuna, packed in water, drained
1 carrot, peeled and shredded
¼ c chopped red pepper
2 TBSP relish
2 TBSP mayo
salt, pepper and onion powder (to taste)

Combine all ingredients in a bowl. This makes enough for two sandwiches. I like to toast my bread and add a leaf of lettuce. Easy and yummy!

I do enjoy a good tuna recipe and any way to work in veggies to a meal. Looking forward to trying it.
