Thursday's Eats ~ Healthy Banana Bread


What do I do when I find these sitting on my counter?


Make banana bread, of course! 

This recipe uses yogurt instead of oil and I substituted half of the flour for whole wheat.  Next time I will try using honey and apple sauce instead of sugar - then all of the ingredients will be healthy!



Healthy Banana Bread
Yield: 1 loaf, 14 servings (serving size: 1 slice)

1 cup all-purpose flour
1 cup whole wheat flour
3/4 teaspoon baking soda
1 cup sugar
2 large eggs
1 1/2 cups mashed ripe banana (about 4 bananas)
5.3 ounces Greek yogurt
Cooking spray

Preheat oven to 350 degree.  Combine the flour and baking soda, stirring with a whisk. Place sugar and butter in a large bowl, and beat with a mixer at medium speed until well blended (about 1 minute). Mix sugar, yogurt, eggs, and mashed bananas. Add flour mixture; mix until combined. Spoon batter into an 8 1/2 x 4 1/2-inch loaf pan coated with cooking spray. Bake at 350 for 40 minutes or until a wooden pick inserted in center comes out clean. Cool 10 minutes in pan on a wire rack; remove from pan. Cool completely on wire rack.
